Opera – Ingegno e Creatività: Torino’s Hidden Gem

During a short holiday back home in Torino, I discovered a little gem that somehow escaped my radar for far too long: Ristorante Opera.

Opened during the difficult Covid-19 period, Opera feels like the kind of restaurant built through resilience, passion, and a genuine belief in hospitality. In an era where many restaurants were simplifying, surviving, or losing identity, Opera quietly refined its own.

From the moment you enter, the atmosphere strikes a beautiful balance between elegance and warmth. The restaurant is smart without being cold, refined without trying too hard. There’s something deeply Piedmontese about it. Walking inside almost feels like entering a traditional winemaker’s canteen reimagined with modern class and precision.

What impressed me most, however, was the execution. Not only from the kitchen, but from the front of house as well. Everything runs with calm confidence, the kind that only comes from a team that truly understands hospitality.

The kitchen, led by Chef Stefano Sforza, follows a philosophy that immediately reminded me of the teachings of the great Gualtiero Marchesi. Simplicity, precision, flavour. No unnecessary complications. No theatrical distractions. Just excellent ingredients handled with intelligence and restraint.

And sometimes, that is far more difficult than creating something elaborate.

One dish in particular genuinely stayed with me long after lunch ended: spaghetti with duck and red pepper.

Without exaggeration, it may have been the best spaghetti dish I have ever tasted.

Perfectly balanced, deeply flavourful, comforting yet refined, it was the kind of plate that makes conversation stop for a few seconds after the first bite. A reminder that extraordinary cooking does not always require fifteen components, endless garnishes, or culinary acrobatics. Sometimes technique, great produce, and clarity of vision are enough.

In fact, I found myself craving the dish again while walking home later that day.

That, to me, is the real sign of great cooking.

Ristorante Opera may not have a Michelin star yet.
But then again, neither do many places that quietly become unforgettable before the world notices them.
